Pierre Bories farms a small organic vineyard in the sunlit hills of Fabrezan in Corbières, crafting expressive wines with native yeasts and a minimalist approach that highlights the character of old Mediterranean vines.
Le Blanc is a rare Corbières white produced in very limited quantities, offering a distinctive expression of old vine Mediterranean varieties. With only about 3,000 bottles made, it brings strong identity and storytelling value while delivering balance, texture, and food friendly freshness. Its refined structure and layered aromatics make it well suited for premium restaurant lists and specialist retail selections.
Maccabeu Blanc 40% + Carignan Blanc 20% + Grenache Blanc 20% + Grenache Gris 20%
The vineyard lies on the southern slopes of the Alaric Mountains near Fabrezan, where sandstone and clay limestone soils and maritime breezes support slow, balanced ripening. Hand harvested grapes undergo gentle skin maceration and native yeast fermentation before eight months aging in seasoned barrels.
The palate reveals white peach, pear, citrus zest, crushed stone, and subtle honey notes with vibrant acidity and long mineral tension. The wine earned 93 points from Decanter.
