The vineyards sit in the natural corridor between the Pyrenees and the Montagne Noire, where Mediterranean warmth is tempered by cool coastal airflows and strong diurnal swings, keeping acidity sharp and aromatics fresh. Night harvesting, low-temperature clarification, and cool stainless steel fermentation at 16 to 17°C preserve every bit of that freshness from grape to glass, with no oak involvement at any stage.
The nose is crisp and aromatic, with elderflower, lime zest, and a hint of boxwood, while the palate delivers bright citrus, a clean green edge, and a lively, flinty finish with just enough fine lees texture to add body. The style is sharp, reliable, and immediately market-ready.
