Winemaker Note
"Our flagship Pinot Noir is a culmination of years of understanding our vineyard. Typically we're using a little bit of whole bunch to add texture but it's very much dependent on the the fruit and the season that we have in front of us. We're always going to get a well-structured, really complex style of Pinot with extremely low yields that produce intensely flavoured grapes. The result is a wine built for ageing, with layers of flavour and structure." Jonny Hughes
Grapes from the Mewstone vineyard were hand picked between the 29th of March and the 14th of April between 12.5 and 13.1 baume. Naturally fermented with 15 percent whole bunch (this varied across the ferments, from zero to 40%). The ferments received minimal pumpovers before being pressed after 21 days. The wine was matured in french oak (40% new) for ten months.
Tasting Note
Dark cherry, forest floor and spice lead into a savoury, finely structured palate. The acidity is vibrant, the tannins are powdery, and the wine carries itself with understated power. Built to age with quiet confidence.
