Picked on April 28th, the fruit was whole bunch pressed, put to old oak and naturally fermented. A typical long slow fermentation extended out to 103 days before we called a halt as the sugars and acidity found the balance we were after. Matured on lees through to late spring before filtering and bottling.
Tasting Note
A precise balance of lemon curd, green apple and subtle florals. The residual sugar is finely woven into the acid line, creating a wine that’s bright, textural and long. A saline edge lingers beneath its juicier notes, promising both early pleasure and ageability.
