Located at the foot of the Sainte-Victoire mountain in Provence, it is a family estate run by since 2012 Dorothée Salat, bringing a feminin touch in the wines. 80 hectares certified organic, with typical grape varieties from Provence. with a rich mosaic of Provençal terroirs : limestone-clay soil, quite high in altitude. Very elegant style of wines.
GRAPES : Grenache (40%), Cinsault (50%), Syrah (10%).
Terroir: Deep soils composed of limestone and clayey sandstone, ancient alluvial deposits with pebbles, ideal for producing great wines. Night harvesting preserves the varietal aromas.
Winemaking: The juices are protected from oxidation from the outset, then pneumatic pressing with inert gas. Selection of the press juices and cold settling for 48 hours. Separate vinification by grape variety with meticulous attention to detail. Alcoholic fermentation under controlled temperature (17°C) without malolactic fermentation.
Aging: In tanks on fine lees for four months.
