Kumesen Shuzo aims to be a constant voice that shares the deliciousness, joy, and splendor of awamori and whisky not only within Okinawa,
but throughout Japan and the world,
and we hope to play a part in shaping “a rich present and future for our customers.”
Guided by the motto inherited from our founder—
“Cherishing tradition while taking a step forward to explore new possibilities in awamori production”—
we will continue to embrace new challenges. Furthermore, through the growth of Kumesen Shuzo,
we aim to lead the way in unlocking new possibilities for the awamori industry
and, ultimately, contribute to the economic development of Okinawa.
That is the kind of company we strive to be.
We import sake from over 50 Japanese breweries, maintaining 0–5°C temperature control throughout shipping. Based in Hong Kong for 8+ years, we operate two shops, an online store, and supply over 500 partners with the city’s widest sake selection.
Since our founding in 1895, we have grown alongside the historic Dogo Onsen Honkan. Here in Dogo, we continue to craft a diverse range of beverages, including our flagship sake "Nikitatsu," "Dogo Beer"—crafted specifically to be enjoyed after a hot spring bath—as well as "Dogo Ale" and "Dogo Gin," both made with local ingredients.
The founding family adheres to the teaching, "Do not merely protect the noren (tradition), but break through it." While inheriting tradition, we are constantly taking on new challenges, such as our recent "Local Production for Local Consumption Sake Brewing Project," as we continue to move forward with the community.
We believe that the alcohol we produce has the power to connect various things. We believe it creates smiles within these connections, expands circles, and beautifies everyday life. Every day, we continue to brew alcohol that represents Ehime and Dogo. Through our products, we are working to aid regional revitalization by promoting tourism to Ehime, Matsuyama, and Dogo, and expanding consumption. Under our new vision, "From Dogo to the World, From the World Back to Dogo," we strive to preserve and develop the culture of traditional Japanese sake brewing.
Founded in 1874, Hayashi Shuzo is a family-owned sake brewery located in the mountainous region of Gifu Prefecture. The 12th-generation owner and toji (master brewer) is Ihyoe Hayashi and we are committed to producing high-quality sake based on his three core principles.
1) "Local production for local consumption"
We start with growing semi-organic rice in our own rice fields. Rice, yeast, and the water, all ingredients are local.
2) Constant improvement of "brewing techniques"
3) Commitment to "traditional handcrafted methods"
We have received numerous gold awards, in Japan, U.S., Italy, France, Australia, Singapore, and Hong Kong.
