Founded in 1874, Hayashi Shuzo is a family-owned sake brewery located in the mountainous region of Gifu Prefecture. The 12th-generation owner and toji (master brewer) is Ihyoe Hayashi and we are committed to producing high-quality sake based on his three core principles.
1) "Local production for local consumption"
We start with growing semi-organic rice in our own rice fields. Rice, yeast, and the water, all ingredients are local.
