TERROIR : Clay and limestone soils, relatively rare on the left bank of the Garonne. They offer resilience to climatic challenges.
VINEYARD AREA: 55 hectares (4.5 ha for Le Merle Blanc)
PLANTING DENSITY: 7,000 vines/ha
AVERAGE VINE AGE: 25 years
CULTIVATION: Mechanical soil work, inter-row sowing of grasses and cereals, which are then chopped and either spread or incorporated into the soil as the only green fertilizer input. Each plot is carefully managed according to its soil, grape variety, and vine age to achieve optimal results.
HARVEST: Hand-picked, early September
CERTIFICATIONS: HVE 3, ISO 14001
VINIFICATION: direct pressing, cold settling, fermentation and maturing on the lees. Treatment by gravity, in small batches.
Winemaking process adapted to each batch. Automatic thermoregulation.
AGING: 25% in new barrels, 25% in second fill barrels, the rest in stainless steel tanks for 6 months.
BLEND: 70% Sauvignon Blanc, 10% Sauvignon Gris, 10%
Muscadelle, 10% Sémillon
ALCOHOL: 12.5%
CELLARING POTENTIAL: up to 3-5 years
TASTING NOTES
Abrilliant pale yellow, this white wine charms with initial delicate aromas of white peach, candied pear, and acacia blossom. With aeration, a subtle oak character envelops and enriches the bouquet. On the palate, the freshness highlights a broad, precise, and silky attack. Combined with the smoothness of the oak, this acidity extends the finish and gives the wine remarkable length.
