Territory and Tradition
In 1716 the Grand Duke Cosimo III de 'Medici set the boundaries of the Chianti area, between the cities of Florence and Siena, where the homonymous wine was born, already very successful at the time, sealing the inseparable bond between wine and its territory of production. In 1932, through a specific ministerial decree, the suffix “Classico” was added to the name Chianti to distinguish the Chianti wine produced in the area of origin. Since then, Chianti Classico has been the wine produced in the territory geographically called “Chianti”: its brand is the Black Rooster brand, present on every bottle of the PDO.
The Black Rooster Today (and Tomorrow)
A significant change relating to the Chianti Classico appellation concerns the project, approved by the Consortium Members in June 2021: dividing the territory into 11 smaller and more homogeneous areas, the Additional Geographical Units (UGA). UGA is the indication on the label of the specific place of the vineyards from which the Chianti Classico Gran Selezione is produced. A project destined to expand in the years to come and a legacy for future generations, with its primary objective to enhance more and more the Chianti Classico PDO, the unique link between wine, man and territory.
Centenary Anniversary (1924 - 2024)
In 1924, thirty-three visionary winegrowers united with a shared vision to establish the Consorzio. They were driven by a belief in a collective purpose and the power of community, aiming to prioritize communal benefits over individual short-term gains to oversee the production of an entire region. These founding members were also insightful enough to recognize the need for a distinctive symbol that could represent the quality, authenticity, and identity of their product. Thus, the Black Rooster was chosen as their emblem.
A century later, the Consorzio has expanded to include 500 members, yet the goals that united us in 1924 remain steadfast. We are committed to protecting the wines from this highly prized region of unparalleled beauty and to supporting winegrowers in the global market-place, all under the symbol of the Black Rooster.
The company Ambrogio e Giovanni Folonari Tenute is the result of the intuition of Ambrogio Folonari and his son Giovanni. They descend from a family historically dedicated to wine business. Since late 1700s the Folonaris have operated in the vinegrowing and wineproducing field and have contributed to writing the history of Italian wine. At the beginning of 2000 Ambrogio e Giovanni Folonari took new and original directions focusing only on Tuscan excellencies from the most important wine production areas. The philosophy behind the goals of “Ambrogio e Giovanni Folonari Tenute” is based on the ownership and management of five famous agricultural estates located in Tuscany. The Estates are: Tenuta di Nozzole (Chianti Classico) – Tenute del Cabreo (Super Tuscan) – Tenuta La Fuga, (Montalcino) – Tenuta Campo al Mare (Bolgheri) - Vigne a Porrona (Maremma). Ambrogio and Giovanni still carry out an important project of revaluation of the territory and its diversity, investing in the estates and focusing on the production of quality wines, elegant, with character and strongly linked to the territory.

Arillo in Terrabianca produces wines in the heart of Tuscany and it is owned by the Burkard family. It is the 2019 when Adriana and Urs Burkard started the Arillo in Terrabianca project with the acquisition of the estates Terrabianca in Chianti Classico, Il Tesoro in Maremma and Colle Brezza in Val d'Orcia. The aim is simple though ambitious: to make, wines with a strong identity and with a deep territorial character following the principles of organic and minimalist wine growing, fostering those native grape varieties that find their best distinctive features in the Tuscan lands: in few words the care for the earth and the sustainability as a mother principle.
Thanks to the expertise of Ruggero Mazzilli, agronomist pioneer since the eighties of the concept of “bio-logic” (smart-organic agriculture), we observed and analyzed the ecosystems that surround our estates, taking care of the biodiversity and fertility of the soils and working on the “cover crop” of our lands. All our properties are organic certified.
Our model is strictly based on two principles: exclusive use of elements of natural origin and the minimization of human interventions on land to recover biodiversity and vitality functions.
In February 2023 the property has kicked off an intensive interior and exterior renovation program that includes the complete revamping of the winery with restaurant, wineshop and art gallery. The entire project was conceived and designed by the Swiss architect Mario Botta, who oversees its development in the various phases of implementation. Into this project we are also creating a new restaurant with the consulting strategy by the legendary 3 Michelin star chef Heinz Beck.
