aaBodega Sommos was founded in 2014 in the heart of the Protected Designation of Origin (D.O.P. Somontano). In less than ten years, Sommos has established itself as the most select and contemporary winery in this young and dynamic appellation. The winery is well-known for the unique architecture of its building, inspired by the silhouette of the iconic Cotiella mountain and recognized by The Drinks Business as one of the “10 architectural wonders of the wine world,” not only for its beauty but also for its functionality in producing excellent wines. All the winemaking processes are carried out using gravity, taking advantage of the 27-meter depth at which the winery is excavated. Inside, you'll find the latest technological innovations that help winemakers and viticulturists work with great precision: from optical selectors that sort grapes individually, to a bridge crane that allows tanks to be filled and racked using gravity without pumps, along with a vertical pneumatic press. The winery’s latest innovations include a yeast bioreactor that allows it to make wines using yeasts from its own vineyard, without commercial yeasts, and a solar farm that enables it to self-supply up to 40% of its energy needs. However, Bodega Sommos claims that its greatest treasure lies in its vineyard. With over 350 hectares of owned vineyards spread across three distinct areas, they are able to showcase the great diversity of the D.O.P. Somontano through lowyield vines. The main vineyard is Finca Torresalas, covering 155 hectares, with the winery located in the center, surrounded by a sea of Chardonnay, Gewürztraminer, and Tempranillo vines, along with a small plot of Pinot Noir. These vines enjoy different sun exposures on soils rich in gypsum and salts. At the foot of the Sierra de Guara, vines are cultivated at Finca Montesa, a set of plots on calcisol and clay soils with nearly 100 hectares of dryland vineyards where they delicately grow Merlot, Syrah, and Cabernet Sauvignon for the Colección range. Lastly, the Güel vineyard, a truly rugged area rich in conglomerates and fossils, situated at the foot of the Turbón mountain. Here, Sommos primarily cultivates Sauvignon Blanc, Garnacha Blanca, and is planting new vines at an altitude of nearly 1,000 meters above sea level. Thanks to the incredible diversity offered by D.O.P. Somontano, Bodega Sommos is able to produce a Colección wine range that reflects the different soils, microclimates, and altitudes of this appellation. For this, they rely on a young and dynamic team with extensive experience in the world of wine, as team members have worked in wineries across Spain and around the globe. In winemaking, the winery remains true to its innovative and quality-focused spirit, harvesting grapes at night, using isothermal tanks, and selecting the grapes upon arrival at the winery.
VISITING THE WINERY
Sommos is a true reference point for wine lovers and is one of the top destinations in the D.O.P. Somontano, thanks to its unique wine tourism offerings. Visitors can enjoy tours, tastings, a restaurant, electric bicycles, and even paragliding flights over the winery. Additionally, the winery periodically offers new experiences depending on the vineyard's stage, allowing visitors to learn about the winemaking process from vine to glass. The winery's imposing building, designed by architect Jesús Marino Pascual, is a geometric play of interlocking cubes that form a prism. The innovative spirit is conveyed at all times, even before entering the winery, as in front of it lies an experimental vineyard that allows visitors to learn about the different training systems used in various wine regions around the world.
SOMMOS GARNACHA
Bodega Sommos Garnacha was established in 2016 as a project by Bodega Sommos, part of the D.O.P. Somontano. Located in the municipality of Murero (Zaragoza), Sommos Garnacha cultivates old bush Garnacha vines spread across various plots in the region, crafting wines that capture the essence of a unique terroir. Clay and slate soils, an extreme continental climate, steep slopes and limited production are some of the key factors that define the distinctive character of these wines.
Our vineyards span over 90 hectares, divided into approximately 200 parcels, each with its own unique characteristics. The soils play a key role in defining the character of the wines from this region. Each parcel is home to old Garnacha vines planted between 1920 and 1970, which have adapted to the extreme climatic conditions thanks to their drought resistance and late ripening. The roots of each vine can extend deeply and widely in search of water and nutrients, enabling exceptional adaptation to the environment. The orientation of the slopes and the areas most exposed to the wind contribute to the singularity of each wine. Under the vision of Carlos Duque, technical director of viticulture, the work team follows a philosophy of adaptation to the particularities of each plot, caring for the vines according to their specific needs to highlight the essence of each terroir.

A leading winery in the region since 1944, Bodega San Valero has the longest history in Cariñena, and has benefitted from access to some of the most prominent vineyards in the region for 75 years.
The winery manages 500 grape growers cultivating over 4,000 hectars of vineyard as active members of the cooperative, where 90% of the vineyards surround the winery facility near the village of Cariñena.
Bodega San Valero focuses on indigenous varieties (Garnacha and Cariñena) which account for 70% of plantings. A long history in the region brings key advantages – some 20% of the Garnacha is classified as “old vines”, ranging from 30 to 100 years, and located at extreme altitudes in very rocky soils.
With its strong temperature contrasts, offers an optimal terroir for the elegant and fruity Garnacha: very dry and hot summers meet cool winters with little rainfall. The vines are planted on the stony soils in Salier and Buscher training. The stone layers can store the required moisture in the soil for a long time. This provides the vines with sufficient water even in the dry summers. During the grape harvest, special attention is paid to destemming the stalks. This prevents tannins from getting into the wine.
During the subsequent mash fermentation (26-28°C), French and American oak barrels are also used, which gives the popular Garnacha additional aroma.
The winery is considered one of the most progressive and sustainable wineries in Cariñena, combining a passion and respect for tradition with the most modern winemaking techniques that Europe has to offer. Sustainability is particularly close to Bodega San Valero's heart. Wherever possible, ecological processes and regional partners are used. For example, the bodega avoids the use of chemical pesticides and fertilisers as far as possible and works mainly with regional suppliers to avoid long transport routes and to support the local economy. The members of San Valero are also socially committed: they promote local football and employ people with disabilities.
Cariñena lies in an outstanding geographical location due to its position along the axis connecting the Ebro Valley and the region of Levante. This position turns Cariñena into a true alternative link between the Basque Country and the Community of Valencia.
Its proximity to the French border makes Cariñena an interesting node in the cultural and commercial relationships with Europe.
Cariñena wine region, located in the Ebro River Valley, has an extension of 14.624 hectars of vineyards, distributed amongst 14 municipalities.
Around 1.540 winegrowers look after these vineyards, which constitute the main economic activity of the region.
