Selected parcels on stony soils at the foot of the Alaric Massif provide cool breezes and natural tension that keep the wine fresh despite the southern latitude. Inert-environment pressing, four-day cold settling, and fermentation in thermally controlled double-walled tanks reflect a high level of cellar discipline, while nine months on fine lees in stainless steel combined with 15% neutral oak aging add roundness and structure without pushing the wine toward a heavy or oaky style.
The nose is elegant and layered, with golden apple, white peach, quince, and orange blossom, leading to a creamy, well-textured palate with a bright lifting acidity and a long, warm finish. The winemaking approach and flavor profile position this clearly as a step-up Chardonnay with real restaurant credibility.
